▲ There are several ways to shred potatoes, but I do love the mandoline for the neat, uniform shreds it gives me. Of course you don’t need one, but if you’re a kitchen gadgeteer like me, you’ll enjoy its usefulness not only when shredding, but when slicing fruits and vegetables—particularly potatoes for french fries (see recipe) and potato crisps (see recipe).
Fabulous on their own, the potato cakes taste even more luxurious when topped with a poached or fried egg.
